Bouncing around, I saw Lynn's research synopsis of the Yungang grotto/caves in Shandong. I visited there in '87. The city of Datong is famous for being the last place in the world to build railroad engines. The last one rolled out in the mid-80s. Don't think that has reduced the demand (or use) of coal in China.

Hi! Liked the earth oven pages! I am addicted to them--Have cooked a turkey in the ground -41 lbs or more each Guy Fawkes Day for past 12 years (November 5). We also do veg. Interested in communicating with those also interested in continuing this tradition in your area-we generally roast a politician or two (made into scarecrows) we select a figure who has plagued the news in the past year and season the turkey accordingly and provide other foods of the same variety-so each year it is a bit different. People are quite amazed-where is the dinner-your standing on It. I give them all shovels and they take turns digging-the kids are amazed to see the hot rocks come out and the smell of wonderfully cooked food warms the cold evening. I have methods and recipies well tried and good! No one has died yet and NO dirt ever gets on my food!!! Try marinating the turkey with a wine base or cover with sliced lemons...Let me know if you are interested in more...can also fill in on Guy Fawkes. Conrad

Maps are very good. So are penguins. I have maps, but no penguins. This is a good thing, as penguins need lots of space, and I live in a little house in Tucson, AZ. I do have lizards, but they are natives, and tolerate me, as opposed to penguins, who are not native. I imagine they would tolerate me anyway, however, as I am fairly easy going. Or so I've been told. Nice page.

Hi! I really liked your pig info. I've done a large number of pig roasts (approx 35-40 of them) but have never used a pit...concrete blocks can be used to make an oven which is then covered with a piece of metal (an old flattened Lincoln hood works good). I place the pig on a pipe rack about 2 feet above two separate banks of charcoal (so that the fat from the pig drips down onto bare ground & not on the fire). Uses about 10 lbs of charcoal per 20 lbs of pig, plus or minus. I usually add some mesquite or hardwood for a smoke flavor and use a meat thermometer to monitor for doneness (although the "head on the floor" test is definitely more exciting!!!). Thanks again for the writeup...I always wondered about using the "pit method"!!!

Hi! Lured by the pit roasting but enjoyed your other stuff here. Pit cooking in New Zwealand is called hangi. The meat is cut into pieces, thus the cooking time is similar to that required for the vegetables. Some people cook a steamed pudding in there too. Hot rocks. Food in wire baskets, heavy sacking over and then earth to seal. The result is supposed to have a pressur-cooking element to it. Good when my brother-in-law does it but not as good as his smoked eels.

Down the west coast of S.A. from Lima through Chile by land to Puerto Mont Ch. By ship to Puerto Natales. By land/air Punta Arenas - Ushuaia - Calefate - Valdez Pen - Buenos Aires - Iguaza Falls - Lago Titicaca - Cusco, Macchu Picchu - back to Lima. We plan to revisit the falls in the new year, thus the research and I ran across your story. Sounds like it was a good trip!
