Interested in communicating with those also interested in continuing this tradition in your area-we generally roast a politician or two (made into scarecrows) we select a figure who has plagued the news in the past year and season the turkey accordingly and provide other foods of the same variety-so each year it is a bit different. People are quite amazed-where is the dinner-your standing on It. I give them all shovels and they take turns digging-the kids are amazed to see the hot rocks come out and the smell of wonderfully cooked food warms the cold evening. I have methods and recipies well tried and good! No one has died yet and NO dirt ever gets on my food!!! I've done a large number of pig roasts (approx 35-40 of them) but have never used a pit...concrete blocks can be used to make an oven which is then covered with a piece of metal (an old flattened Lincoln hood works good). I place the pig on a pipe rack about 2 feet above two separate banks of charcoal (so that the fat from the pig drips down onto bare ground & not on the fire). Uses about 10 lbs of charcoal per 20 lbs of pig, plus or minus. I usually add some mesquite or hardwood for a smoke flavor and use a meat thermometer to monitor for doneness (although the "head on the floor" test is definitely more exciting!!!). Thanks again for the writeup...I always wondered about using the "pit method"!!!

The meat is cut into pieces, thus the cooking time is similar to that required for the vegetables. Some people cook a steamed pudding in there too. Hot rocks. Food in wire baskets, heavy sacking over and then earth to seal. The result is supposed to have a pressur-cooking element to it. Good when my brother-in-law does it but not as good as his smoked eels.
