I enjoyed your team Mumu pig cooking page. I have a cuban friend here who does a similar pig roast (the cuban food in miami is amazing...especially the Lechon asado... roast pork). This guy has a big wooden box on short legs. He puts the pig in this box, puts a steel lid on the box, and builds a charcoal fire on top of the lid. Hi! I found your page very interesting as I just cooked my first "kalua" pig. Our adventure started on a Friday in September when we first dug the "imu" (pit). The imu was about 5' by 4' and 2 1/2' deep. We started with about 1/4 cord of orange wood which burns very long and hot. There were still embers after three days. After the the wood was layed out teepee style we added the lava rocks on top. After 1 1/2 cans of kerosene we lit the fire at midnight Saturday. when the fire burned down about three hours later we threw banana plant stumps on the hot rocks.The pig was then placed in chicken wire, rubbed all over with Hawaiian salt. We finished this part by inserting 6 or 7 rocks inside and wrapping it up. After laying the pig on the banana stumps we covered it with banana leaves, wet burlap sacks, a tarp and finally dirt. Seven hours it emerged and to much joy it was actually cooked.

As a native of Tierra del Fuego, I must say it is the best piece on my land I have found on the Net (it's even better than many brochures).
