Chicken Cacciatore Recipe

  • 2-3 chicken breasts (boneless, skinless)
  • 2-3 cloves chopped garlic
  • 4 med tomatoes (sliced)
  • 1/2 lb mushrooms (sliced)
  • 1/2 cup stock
  • 3 oz tomato paste
  • 1/4 cup marsala
  • 1/8 cup olive oil
  • spices: pepper, basil, thyme, marjoram, bay leaf

Prepare stock. Chop garlic. Slice tomatoes and mushrooms.

De-bone and remove skin from chicken breasts. They can be cut into thin strips or left whole. Brown the chicken in olive oil and throw in some chopped garlic.

Add: slided tomatoes and mushrooms, 1/2 cup stock, tomato paste, and marsala. Add spices to taste.

Cover and simmer for approximately 45 minutes.
