Chicken Salad

Ingredients:

  • bunch fresh spinach leaves
  • 1 chicken breast, grilled
  • 8 oz sliced mushrooms
  • 4 tbsp. unsalted butter
  • fresh romano or parmesan cheese

Quantities are very approximate. The above makes enough for two large salads. Adjust quantities as needed.

Whenever will grill chicken, we usually grill an extra piece to have in this salad in a day or two. If you don't have leftover chicken, you can quickly grill up a fresh piece. Chop the cooked chicken into little pieces. If using leftover, re-heat it briefly in the microwave.

Saute sliced mushrooms in ample quantities of butter.

When ready to eat, get enough fresh raw spinach to make a bed of spinach on two plates. Place mushrooms and chopped chicken on top of the spinach, then coarsely grate romano cheese on top just before serving.
