Orange Sauce for Duck

Ingredients:

  • 1/3 cup orange marmalade
  • 1 T soy sauce
  • 1 T butter
  • 1 T flour
  • 3/4 cup dry white wine
  • 1 T wine vinegar
  • 1/4 cup consumme
  • 1/4 tsp pepper
  • 1 orange, peeled and cut into wedges

Combine marmalade and soy sauce, brush some over duck.

Make roux with butter and flour.

Add wine vinegar and consumme. Boil, stirring.

Simmer 10 minutes. Add remaining marmalade-soy sauce mixture. Simmer 10 more minutes.

Cook oranges in boiling water for 10 minutes. Drain and keep warm.

Serve on the side with roast duckling.
