Simple Salad Dressings

Mint vinaigrette

Ingredients:

Quantities are very approximate. Adjust to suit your taste buds.

Place mint leaves, garlic, vinegar, and honey in a food processor or smoothie blender.

Start blending and with the motor running add the olive oil.

Pulse to desired consistency, and then season to taste.


Olive oil, lime juice, mustard, soy sauce

Ingredients:

Quantities are very approximate. The above makes enough for two large salads. It also works very well as a dressing for cooked broccoli.

I like a little more lime juice than olive oil, but do a taste test and add a little more of whatever until the taste is pleasing. If using a fresh line, also grate some zest into the mix.

Put all of the ingredients in a cup or glass and stir vigorously until mixed. Taste, adjust quantities, re-mix and then refrigerate until needed. Can easily be made and kept refrigerated a day in advance.
