Shrimp with Lime, Tomatoes, and Cilantro

Ingredients:

Prepare rice before cooking shrimp.

Marinate shrimp with 2 tbsp. lime juice, 2 tbsp. olive oil, garlic and cumin for at least an hour.

Heat olive oil in a non-stick pan and cook shrimp (saving marinade) on one side for 1-2 minutes, then flip over quickly. Do not overcook.

Add tomatoes, cilantro, and garlic marinade to the frying pan. Toss well and cook until just heated through.

Serve over rice.
