Cabbage Salad

Ingredients:

  • approx. 1/3 head of green cabbage
  • 1 chicken breast, grilled
  • 4 oz chopped mushrooms
  • 3 tbsp. fresh cilantro, chopped
  • 1 tangerine, divided into sections

Quantities are very approximate. The above makes enough for 2-4 servings. Adjust quantities as needed.

Whenever will grill chicken, we usually grill an extra piece to have in a salad in a day or two. If you don't have leftover chicken, you can quickly grill up a fresh piece. Chop the cooked chicken into small pieces.

Run the cabbage through a food processor to shred it similar to the consistency of coleslaw.

Chop the mushrooms into small pieces, and chop the cilantro leaves after removing the stems.

Combine all except tangerines in a large bowl and mix with salad dressing. Allow to sit for a short time before serving for the full flavors to mix. Top with tangerine sections just before serving.
